Eighteen years ago, I unexpectedly collapsed while at work in a theme park. When I regained consciousness, I found myself in hospital with a large brain tumour that required immediate surgery. The initial prognosis for this type of cancer was only a couple of years. However, after multiple surgeries, I am still enjoying life and finding ways to stay independent, despite the odds. It’s the little things that matter, and Lite n’ Easy meals have made a meaningful difference in my life.
Before Lite n’ Easy, food wasn’t really a priority. Because of the effects of my brain cancer and SMART Syndrome, preparing meals was difficult and tiring. Most days I would skip lunch altogether or make do with bread and honey. I wasn’t eating properly, and I knew there had to be a better way.
When I discovered Lite n’ Easy, I was drawn to the convenience, but what really impressed me was the variety. I choose the frozen meals because they’re ready to go, which makes life so much easier. I don’t have to eat the same thing every day anymore, there are so many options. Having that choice means I can decide for myself what I feel like eating each day, and that independence has been a big change for me. With support from the NDIS, Lite n’ Easy is also surprisingly affordable. The meals are balanced, healthy, and taste great, and being able to order on my iPad and have them delivered straight to my door takes away the stress of meal planning and cooking.
These days, I genuinely look forward to meals. I love the chicken dishes, anything with noodles, and meals with a bit of spice. They’re light but filling, and always tasty. Best of all, it’s simple. It just goes in the microwave and I’m eating something wholesome within minutes. Heat and eat, that's it. It's just such a simple, straightforward process. Being able to do that for myself is just phenomenal.
