A few years ago, Jessica was diagnosed with Autoimmune Hepatitis and needed treatment with steroids. The side effects caused weight gain and made it harder for her to manage her mobility and balance. She often missed out on outings, not due to lack of interest, but because it was physically more challenging. I was worried that she was on a path to needing mobility aids and her lifestyle would be limited permanently. “I really wanted to feel better in myself so I could do the things I love, like riding horses with Mum,” Jessica explains.
“Before Lite n’ Easy, I tried other diets, but they either didn’t work or left me hungry. Starting the full Lite n’ Easy program gave me structure, and I was able to build up my confidence. I then eventually moved to just lunches and dinners as I gained confidence preparing my own breakfasts. I love that I can pick from a big variety, including vegetarian meals and plenty of healthy snack options too. When Mum is working late, it’s so easy to organise my own dinner and enjoy it at a time that suits me.”
With help from the NDIS, Lite n’ Easy has been both affordable and sustainable for Jessica. “Since starting, I’ve lost 24 kilos and I feel so much healthier. I have more energy, and I’ve added swimming, gym, and horse riding into my routine,” she shares. For Leanne, the biggest change has been seeing Jessica’s independence grow, “she’s so much more confident and empowered to make her own choices. It’s been amazing to watch, and it gives me peace of mind,” Leanne says.
Jessica is thriving. She’s riding horses again, staying active, and pursuing her creative passions. “I recently completed my Certificate III in Photography, and I love drawing and painting in my spare time. Lite n’ Easy has helped me feel stronger and more confident, it’s a big part of my lifestyle now,” Jessica says. As her mum, Leanne couldn’t be prouder, “seeing her improved happiness, health, and independence has been the most rewarding part of this journey. I know that in the future, when I am not around, she will be able to look after her own dietary needs and that is a great comfort,” says Leanne.
