In a large non-stick frying pan heat 15ml of oil over a medium heat.
Add onions & carrots and sauté for 3-4 minutes to soften.
Add the beef and cook for a further 2-3 minutes.
Reduce heat and add massaman curry sauce, potatoes & green beans, then simmer for a further 3-4 minutes.
Microwave rice for 90 seconds on high as per instructions on pack.
Place rotis on a non-stick frying pan over a medium heat and lightly toast each side for 15-20 seconds.
